I tasty, vegetarian alternative to beef!

Ingredients

  • 1 large head of cauliflower
  • 4 tbsp. olive oil
  • 2 tsp. ground turmeric
  • ¼ tsp. salt
  • 4 medjool dates, de-stoned, sliced
  • 1 cup (15g) cilantro leaves
  • 3 tbsp. roasted almonds, chopped

    For the dressing:
  • 3 tbsp. cilantro leaves, finely chopped
  • 2 tbsp. gochujang (red chili paste)
  • 2 tbsp. fresh lime juice
  • 1 tbsp. olive oil
  • 1 tsp. maple syrup

Instructions

  1. Heat the oven to 425°F (220°C).
  2. To make cauliflower steaks, cut the cauliflower lengthways into two or three ¾ inches (2cm) thick slices. Also retain the parts that fall apart.
  3. In a small bowl, whisk together the olive oil, turmeric and salt. Arrange the cauliflower on a baking sheet, or in a roasting dish, and drizzle with the oil mixture. Then gently turn the steaks and rub to coat in the oil. Place the baking sheet into the oven and roast the cauliflower until golden, approximately 25-30 minutes.
  4. In the meantime, make the dressing by placing all the ingredients into a jar or small bowl and whisk together until well combined.
  5. Once the cauliflower has cooked, arrange it on a platter and drizzle over the dressing.
  6. Top with the dates, cilantro leaves and chopped almonds. The cauliflower can be served either hot or cold.
